Pelješac Oysters: Why Are They Among the Best in the World?
There are flavours that take you back to a place even when you're far away. On Pelješac, that flavour is the oyster.
Ston oysters have been cultivated in Mali Ston Bay continuously for over 2,000 years – making them one of the longest culinary traditions in the entire Mediterranean. The cold, clean, nutrient-rich waters give them a distinctively briny flavour that gourmets across Europe describe as "perfect".
What Makes Them Special?
Unlike industrially farmed shellfish, Ston oysters grow slowly, in natural conditions, without any additives. Farmers hand-clean and relocate them through different zones of the bay to optimise flavour. The result is an oyster that is firm, juicy, and richly aromatic – authentic in every sense.
At Konoba Feral in Brijesta, we serve them exactly as the sea made them – fresh, with a squeeze of lemon and a glass of local white wine. Simple. Perfect.
Brijesta and Shellfish Farming
Brijesta is a small fishing hamlet on Pelješac with a direct view of the shellfish beds. Here, the sea isn't just a backdrop – it is the lifeblood of the village. We know the fishermen and shellfish farmers personally, and fresh oysters travel straight from the beds to our table.
"There's no better place to eat oysters than where you can watch them grow."
